XO Palm Sugar Block - 500G

Palm sugar, a 500g block. XO packs the solid sugar tapped from palm sap, with a caramel, smoky, slightly maple note. Thai, Vietnamese, and other Southeast Asian pots use it where white sugar would taste flat.

Curries need it against fish sauce and chilli. Vietnamese caramel and braises, pad thai, desserts, and a cocktail syrup all shave from the same block. Grate or melt what you need. Don't try to pour it.

500g is a kitchen block a home wok can also keep. Store it dry, wrapped, so it doesn't pick up the smell of the spice shelf. A damp block turns sticky and then moulds.
