Phoenix glutinous rice flour, 500g. Fine white flour milled from sticky rice, for chewy Asian sweets and dumplings. Pastry shops use it for mochi, tang yuan and nian gao.

The name trips people. Glutinous means the sticky, elastic bite the flour takes once you cook it, not wheat gluten. The flour is naturally gluten-free. That chew is why you reach for it instead of a wheat flour.

The 500g bag is a retail pack, so a home baker making those sweets uses the same one. Keep it sealed, cool and dry. The origin is on the pack if a menu note needs it.

Key Features

  • Milled from glutinous (sticky) rice
  • Signature chewy, elastic texture when cooked
  • Naturally gluten-free
  • Fine, white, easy-to-work flour
  • Handy 500G retail pack

Recommended Use

  • Despite the name it is naturally gluten-free; "glutinous" refers to the sticky, elastic texture the flour develops when cooked, which gives mochi, tang yuan and nian gao their signature bite.
