Canola frying oil, clear, 15.88kg. Old World. Refined, neutral, high smoke point, for a commercial fryer that must not taste of the last batch. A jerrycan, not a 1 litre bottle. About 17 litres in the drum.

A kitchen fries potatoes, chicken, and fish, and a doughnut fryer can run on it. Cloud kitchens and hotel fryers use this size. A home kitchen does not. Don't finish a salad with it. The point is that it tastes of almost nothing.

Keep it cool, dry, and out of the sun. Filter the fryer the way you already do. Don't top a burnt fryer with fresh oil and hope the flavour goes away. 15.88kg is a working drum. Handle it as a heavy can, not a bottle.
