Sea salt flakes, 1.4kg. Maldon packs the pyramid flakes chefs finish a plate with. Clean salt, a crunch, and a look the guest can see. You don't stir this into a dough by the handful. You pinch it on at the end.

Steaks, fish, vegetables, tomato salad, burrata, antipasti, bread, chocolate, and a cheese board all take a flake. Fine dining and hotel passes keep the tub. 1.4kg is a kitchen tub, not a 125g retail box. Decant a small ramekin for the pass and keep the tub sealed.

Flakes crush if you slam the lid on. Store it dry. A damp flake collapses into ordinary salt, and then you have paid for crunch you no longer have.
