Du Puy green lentils, 500g. Le Bon Semeur. Small, dark green lentils from the Le Puy region, with a peppery, mineral taste. They hold their shape in the pot. Check the pack for the AOP or PDO mark.

A French kitchen makes salade de lentilles and petit salé, or serves them next to fish, duck, or lamb. A hotel uses them in a soup or a stew when the plate needs a starch that is not potato. They also work in a vegetarian dish, a dal, or a grain bowl.

The 500g pack is a retail size, so a restaurant can open one bag and a home cook can too. Keep it cool and dry, and reseal it so moisture and pests stay out. Don't boil them until they burst.
