All-purpose 00 flour, blue bag, 25kg. Same Caputo Cuoco flour as the small blue pack, in a sack a pizzeria or a bakery actually empties. Strong gluten, fine grind, for pizza and for bread.

Neapolitan, Roman, and New York doughs, al taglio, pinsa, ciabatta, focaccia, and naturally leavened bread all come off this sack. Italian pastry doughs too. Medium fermentation is where this blue flour is comfortable. The red Pizzeria bag is the one you pick when the ferment runs much longer.

25kg stays in the flour room, closed, off the floor. A home kitchen does not need this sack. Scale every dough. Humidity in the room will change the water before the recipe does.
