A-1 Kasuri Methi - 50G

Dried fenugreek leaves, 50g. A-1 packs kasuri methi, the herb North Indian curries finish with. The smell is gently bitter, a little like maple. You crush it. You don't boil it for an hour.

Rub the leaves between your palms and stir them in near the end of the cook. A little is enough. A 50g pack lasts a restaurant spice draw and a home masala tin, because the dose is a pinch, not a handful.

Keep it airtight. Dried fenugreek loses that perfume if the bag lives open. Smell it before service. If it smells like dust, it is time for a new pack.
