This is aged longer than light soy, with a darker colour, thicker consistency, and a slightly sweet, less salty profile. Used primarily for braising, colour-finishing, and giving Chinese dishes their characteristic mahogany hue.

Use it for Chinese red-cooked dishes (hong shao), braising sauces, pork belly, beef, lamb, lo mein and chow mein noodle colouring, and fried rice (Yangzhou-style) colour-finishing.
