Scallops, 1kg. These are bivalve molluscs that live on the cold-water sea floor and are prized as a favourite sushi and sashimi topping. They have an extremely smooth, glossy flesh with a gentle, slightly sweet flavour. Sold under the Tonbetsu name.

A sushi bar uses them for Sushi and sashimi, a classic favourite, seared or grilled scallop preparations, chawanmushi and Japanese steamed dishes, and carpaccio and modern seafood plating.

Keep it frozen at -18°C. Thaw it in the fridge before you use it. Do not freeze it again once it has thawed. Allergens on the pack: Shellfish (molluscs). Origin on the label: Japan.
