Arborio rice, 1kg. Campagna. Short grain, the rice for risotto. The starch makes the pot creamy while the centre of the grain can still stay firm. A family kitchen and a small restaurant both use 1kg.

Cook risotto Milanese, mushroom, seafood, or asparagus. Rice pudding, arancini, a rice salad, and a soup can take it. A paella is happier on a Spanish rice, though some kitchens still use this grain. Don't rinse it the way you rinse basmati. You want that starch.

Keep it cool and dry, and seal the bag. One kilo is a few risottos, not a banquet. Toast the rice in fat before the stock goes in. Don't pour in all the stock at once.
