Comté, aged 4 months, about 2kg. EntreMont. Raw cow's milk, AOP, from the Jura. This age is the milder block. Creamier than an older Comté, and it melts more readily, with the nutty, fruity, slightly grassy taste the cheese is known for. The wheels rest on wooden boards.
A French restaurant cuts it for the cheese board and for croque-monsieur and croque-madame. A hotel kitchen melts it into fondue, a gratin, quiche, or tartiflette, and puts it on a toastie. On the board, pour a Jura white, Champagne, or a light red.
The 2kg block is the kitchen cut, not a retail wedge. Keep it at 2-8°C. Wrap the cut face tightly in cheese paper. Animal rennet, as the AOP rules require. Weigh it when it arrives. The block weight is approximate.
