Traditionally, Soy Sauce is made from four main ingredients : Soybeans, WheatSalt and Water.  Fermentation takes several months, so the Soy and Wheat Proteins can break down — a process known as hydrolysis.  Through innovation, Sanjirushi has created a formula to remove gluten from this Soy Sauce, but keeping the taste profile intact.
